CLASSIC METHOD
BATTISTA
The Classic Method of Cantina Semonte originates from a careful selection of Pinot Noir and Chardonnay grapes. The strict winemaking protocols and long permanence on the yeasts give the wine a character suitable for all occasions. The name Battista of our Spumante, was the name of Federico da Montefeltro’s wife, a very well appreciated and respected Renaissance woman.

Grapes: Dolcetto 90%, Merlot 10%
First year produced: 2012
Cultivation techniques: Guyot system for Dolcetto grapes and spurred cordon for Merlot grapes
Production: Yield per hectare 50-60 q/ha
Refining: 24 months in french oak barrels and a further 24 months in bottle
Vinification: grapes harvested by hand, destemmed and softly crushed. Cold pre-fermentation maceration for about 10 days, this fermentation phase happens at controlled temperature in stainless steel containers.
Aroma: floral scents, hints of red fruits, vanilla and spices
Taste: dry, warm, soft

DOLCETTO
CORDARO
From Piedmont to the hills of Upper Umbria in the wake of Savoy officials, after the unification of Italy in 1861. These are the historical traces that testify the settlement of the vine in the Gubbio area. A happy settlement, which guarantees the wine a quality that was highly appreciated since the beginning of the twentieth century. The goal is to rediscover, as Luigi Veronelli said, a wine “of beautiful balance, complete in taste and not lacking in elegance and texture” (I Vini d’Italia, 1961).

CHARDONNAY
MONTELETO
From the hills of Gubbio at 500 meters above sea level with a particularly temperate climate, in a clayey and calcareous soil, has birth a wine properly balanced with a straw yellow color. The delicate and fruity aroma and the elegant and harmonious taste make it particularly ideal in combination with first courses based on fish or vegetables.

First year produced: 2015
Cultivation techniques: Guyot system
Production: Yield per hectare 70 q/ha
Vinification: the grapes are harvested by hand and softly pressed. Fermentation takes place at a controlled temperature in stainless steel tanks. At the end of fermentation, the wine is kept on the fine lees for 6 months
Aging: 4 months in steel, a small part in French oak barriques and 3 months in bottle
Aroma: fruity hints of peach, citrus and floral hints of yellow flowers
Taste: dry, fresh and savory

MERLOT RESERVE
COSTANTE
Our Merlot “COSTANTE” is a vigorous but balanced wine with a strong soul, just like the land from which it comes from, Gubbio. The grapes come from the Semonte area in Gubbio, where the vineyard is constantly kissed by the sun and combed by the wind. Its clima is ideal for the growth of these grapes, which are harvested in the vineyard during the early hours of the day, selecting only the best ones. “COSTANTE” ages for 16 months in French oak barrels and completes this stage with another 16 months in the bottle. Our Merlot is a wine with great aging potential.

Taste: enveloping and intense with elegant and silky tannins

MERLOT
COLDO
Our “Coldo” red wine is born at our Vineyard in Mocaiana at 450 mt above sea level on a marly soil in Gubbio. Our Coldo is a merlot wine with delicate scents of dark berries, soft spices and with floreal shades.
The tannin is fine and elegant with a great taste balance.
Grapes: Merlot 100%
First year of production: 2022
Cultivation techniques: spurred cordon
Production: 70q/ha each hectare
Vinification: Grapes are harvested by hand, destemmed and softly crushed. Poured first in Steel containers then in our concrete tanks, the “Tulipe”. First controlled temperature at around 10 Celsius followed by a 22 degree Celsius temperature during the malolactic fermentation.
Refining: 8 months in French oak barrels and another 12 months in the bottle
Aroma: delicate scents of dark berries, soft spices and with floreal shades
Taste: dry, warm, soft

SOUR CHERRY WINE
CERASINO
The tradition of wine and sour cherries in the ancient Area of Gubbio and Cantiano, it is renewed thanks to the passion and skilful work of Cantina Semonte. A wine flavored with sour cherries, with a ruby color and an intense aroma of black cherry, with hints of cocoa and toasted hazelnuts.
Grapes: Merlot 70%, sour cherries 30%
First year produced: 2020
Climate: characteristics of the continental territory, with hot summers and optimal temperature ranges. Cold and snowy winters, with rainfall spread throughout the year.
Aging: 3 months in steel tanks
Aroma: strong hints of black cherry, cherry and violet
Taste: sweet and fragrant
