SUPERIOR SPUMANTE TRADITIONAL METHOD BRUT
BATTISTA
Once the Pinot Nero and Chardonnay grapes have been carefully selected, the traditional method of Azienda Agraria Semonte commences. Strict vinification protocols and a long stay on natural yeasts ensure the wine is suitable for every occasion. Battista, the beloved wife of Federico da Montefeltro (Duke of Urbino, born in Gubbio in 1472) and a well-known woman of the Renaissance, lent her name to this spumante.
Cépage: 50% Pinot Noir – 50% Chardonnay
Cultivation techniques: Guyot with a plant density of 6,000-9,000 plants/ha Yield per hectare 50-60 q
Harvest period: first ten days in August for Chardonnay and last ten days for Pinot Noir
Ageing on natural yeast cultures: at least 20 months
Colour and Perlage: bright straw yellow. Fine, persistent perlage
Aroma: fresh bouquet, fruity apple note, white flowers and yeast fragrance
Taste: fresh, smooth and well-balanced
Pairings: perfect for every occasion. Serve at 8-10°C

DOLCETTO ROSSO IGT UMBRIA
CORDARO
From Piedmont to the hills of Northern Umbria in the footsteps of Sabaudian officials. This is the historic path that testifies to the emergence of the grape cultivar on the estates around Gubbio after the Unification of Italy in 1861. A successful emergence that would guarantee a very popular, top quality wine in the early twentieth century. In the words of Luigi Veronelli, the aim was to rediscover a “well-balanced, elegant wine with taste and substance” (I Vini d’Italia, 1961).

Cépage: 90% Dolcetto, 10% Merlot
First vintage: 2012
Climate: continental, with hot summers and optimum temperature differences. Cold snowy winters with rainfall throughout the year.
Cultivation techniques: Guyot
Ageing: 24 months in French oak barrels.
Vinification: grapes hand harvested, gently de-stemmed and crushed. Fermentation takes place at controlled temperature in stainless steel tanks. Approximately 10-days maceration
Aroma: floral notes and hints of red fruit, vanilla and spice
Taste: dry, warm and fairly smooth
ABV: 13% vol.
Pair with: starters, cold meat cuts and cheeses, first courses with white truffle, pasta with meat sauce, red meats
Ageing potential: 5 years
CHARDONNAY BIANCO IGT UMBRIA
MONTELETO
The hills of Gubbio 500 metres above sea level with a particularly temperate climate and a clay and limestone soil produce a well-balanced, straw coloured wine. Its delicate, fruity bouquet and smooth, elegant taste make it ideal to pair with fish or vegetable-based first courses.

Cépage: 100% Chardonnay
First vintage: 2014
Climate: continental, with hot summers and optimum temperature differences. Cold snowy winters with rainfall throughout the year.
Cultivation techniques: Guyot
Ageing: 6 months in stainless steel, 6 months in bottles
Vinification: hand harvested grapes are gently pressed. Fermentation takes place at controlled temperature in stainless steel tanks. When fermentation comes to an end, the wine is kept on its lees for 4 months.
Aroma: fruity hints of yellow peach, citrus and yellow flower floral notes
Taste: dry, fresh and tangy
ABV: 13%
Pair with: cold starters, bean soups, white meats
Ageing potential: 3 years
WINE AND MORELLO CHERRIES
CERASINO
Cantina Semonte’s passion and skill has helped renew the tradition of wine and Morello cherries in the ancient dioceses of Gubbio and Cantiano.
A Morello cherry-flavoured, ruby, almost garnet red wine with an intense bouquet of sour cherry, and hints of cocoa and roasted hazelnuts.
Excellent paired with aged cheese, plain pastries, soft desserts and dark chocolate.
